Haddock With Wilted Spinach

Certain things are just made for each other and this is definitely the case for white fish and spinach – I am using haddock here but you could use any white fish, just make sure you get a thick cut. Also this is a perfect light, clean meal to give your body a rest after the holiday season! Serves 2 What you will need: 2 haddock filets (try to choose a thick cut rather than long) 2 teaspoons of capers 1 lemon A small bag of spinach (generaly about 500gr) Butter Olive oil Salt and pepper A handful of fresh chopped parsley ( this is optional but don’t bother with dry parsley it won’t add anything!!!)
